Chừa một chút dầu ăn trong chảo, thêm tương ớt, tỏ băm vào rồi cho thịt băm vào xào săn, nêm 30ml rượu vang, 4 muỗng canh đường, 45ml giấm và 75 ml nước lọc, đun sôi đến khi hơi sệt là được. Cuối cùng cho cà tím vào đảo đều là xong.
