Mề gà rửa sạch, cho muối vào bóp đều rồi rửa lại với nước vài lần nữa. Sau đó thái mề gà thành những miếng ngang vừa ăn. Tẩm ướp mề gà với 1/3 muỗng cà phê muối, 1 muỗng cà phê hạt nêm, 1/2 muỗng cà phê đường, 1/2 muỗng cà phê tiêu khoảng 10 phút cho ngấm.
Gừng rửa sạch rồi thái chỉ, sả rửa sạch, thái lát. Đặt chảo lên bếp, thêm 2 muỗng canh dầu ăn rồi cho gừng vào phi thơm.
Tiếp theo, cho mề gà vào đảo đều. Khi mề gà đã chín tới tiếp tục cho sả vào đảo đều. Để chảo trên bếp thêm 3 phút nữa, nêm nếm gia vị, rắc chút hành lá rồi tắt bếp.
Cho mề gà xào ra đĩa dùng nóng với cơm rất ngon. Có thể an kèm cùng ít lá húng quế cho thêm và dưa leo cho ngọt nhé!
